Finca San Jose is a farm after our own hearts for their impeccable processing practices. This Bourbon variety is washed using selected wine yeast varieties to catalyze fermentation with meticulously controlled temperature and pH. Careful attention is also given during drying where, at high noon, the coffee is covered to achieve uniformity. The result is a transparency of flavor attributable to variety and terroir rather than post-harvest handling.
The sweetness of this coffee bears resemblance to that of ripe Tartarian cherry and a welcoming soft raspberry juiciness that lingers between sips.
